Fabula White is a blend of Malvasia and Vermentino grape varieties. After the harvest in September, following an accurate and rigorous selection of the finest grapes, the grapes are cold macerated and fermented at controlled low temperatures to extract the full aromatic potential. Due to the different characteristics of the vines the vinifications of the Malvasia and Vermentino are done separately, then around April, the wines are blended. The Malvasia provides with softness, body and roundness, while the Vermentino creates the extraordinary fragrance of the Fabula White, an elegant wine of great personality and pleasant taste. -

The Maremma region is well known for its excellent withering wines. Indeed, the soil’s gentle inclination, its richness in minerals , and its right exposure to the sun favour the production of grapes well suited to withering. In the first half of September, once the adequate maturity of the grapes is reached, the spines of the bunch are twisted, so as to interrupt the passage of the sap and the consequent drying of the grapes. Once the right concentration of sugars is reached, the grapes are picked to be vinified. The transformation occurs gently, through a first cold maceration of the must, followed by a fermentation in oak barriques. The high concentration of sugars allows the fermentation to stop spontaneously and, with subsequent batonnages and decanting, the wine refines and assumes the warm notes of sweet ripe fruit accompanied by the richness of sweet tannins and sugars. The Fabula Passito leverages and enhances the richness of the Sangiovese and Syrah grapes, balancing sweetness and alcohol, to create a tasteful and enjoyable meditative dessert wine. -
Since Etruscan times, the Maremma land was appreciated for the high quality of its wines. Fabula Riserva (90% Sangiovese variety) is an intense, strong and fulfilling wine that exalts the characteristics of the Maremma soil. The wine is aged for 2 years in oak barriques, then bottle-aged for an additional 6 months. It is a wine with great structure that is well balanced by a good softness and acidity on the final. Fabula Red is a 100% Sangiovese variety wine. It leverages the excellent Sangiovese grapes produced by our Giannino vineyard that is laid down on a soft hill benefiting of our vicinity from the Mediterranean sea. The remarkable grapes combined with a purposeful wine-making technique (stainless steel batonnage for 12-24 months and bottle-aged for an additional 6 months before release) make the Fabula Red an enjoyable red wine full of body to taste, and persistent cherry aromas to smell. -
The White Grappa is produced in vapour stream continuous distillation with the classical double distillation system of the fragrant Sangiovese pomace. This pomace maintains the fragrant characteristics of the wine from which it originates. The quality of the pomace and the careful production method conveys unique character to the product. -
